We've had these threads before but not since this generation really began to take hold and that's afforded a lot of new great voice acting.
My favorite still resides on GC. Eternal Darkness was loaded with such voice talent that it's worth owning for that entertainment alone.
I forget his name, but the royal guy with the wig when he was in the insane room saying "The rats will eat out your eyes!" was amazing.
As for me, I've always loved David Hayter as Snake.

Move to 1:48. The last 10 seconds may be some of the best voice acting in gaming history.
Yea there it is! The insanity effect were you turn a corner and you just see his face from behind the corner was also equally aweasome.

Not only was Eternal Darkness a terrific game, but the voice acting was pretty good, too.

Off the top of my head, Ill have to say Uncharted. Not only did it have great voice acting, but the cutscenes too were amazingly well done.
I really like the voice acting in the Half-Life 2 games. It's probably a combination of that and the character animations, but the conversations that take place between characters seem really real.

Day Of The Tentacle
The 'Sam & Max' series
Probably the 'Monkey Island' series too, but I'm too lazy to play videogames apparently.
Lego Star Wars
Zelda (except when they actually say sentences)

I am really liking the voice acting in gta 4. The characters are so well done and really make this feel like a movie or something, really well done.
